FWIW, I’ve been using this approach for years. I use it to build and test with different compilers using the same git repo. It also makes git status much cleaner. And, if you are careful, you can switching between branches with little or no recompiling.
I haven’t tried this with CUDA builds, so I can’t speak to that. But parallel builds have always worked fine for me.
